I keep this basic muffin mix on hand all the time. Having this ready makes muffins a quick snack or breakfast to throw together when the craving hits.

Basic Muffin Mix
In a gallon baggie or other container with a lid add the following:
- 9 cups flour
- 3 cups sugar
- 6 teaspoons baking powder
- 3 teaspoons salt
Seriously, that’s it. Give it a good shake and store in the freezer until your ready to use. This makes about 12 cups of basic muffin mix.
A few ideas to get you going . . . I usually quadruple these and put a couple dozen in the freezer for later.
Chocolate Chip Muffins
- 2 cups muffin mix
- 3/4 cup milk
- 1 egg
- 1/4 cup melted butter
- 3/4 cup chocolate chips
Combine everything. Bake at 400 for 20 minutes. Makes 12 muffins.
Double Chocolate Muffins
- 2 cups muffin mix
- 1/2 cup cocoa powder
- 3/4 cup milk
- 1 egg
- 1/4 cup melted butter
- 3/4 cup chocolate chips
Combine everything. Bake at 400 for 20 minutes. Makes 12 muffins.
Blueberry Muffins
- 2 cups muffin mix
- 3/4 cup milk
- 1 egg
- 1/4 cup melted butter
- 1 cup fresh or frozen blueberries
Combine everything (blueberries last once everything else is combined). Bake at 400 for 20 minutes. Makes 12 muffins.
Oatmeal Raisin Muffins
- 2 cups muffin mix
- 3/4 cup oats
- 1 tsp cinnamon
- 3/4 cup milk
- 2 eggs
- 1/4 cup melted butter
- 1/2 cup raisins
Combine everything. Bake at 400 for 20 minutes. Makes 12 muffins
Do you see where I’m going here? The possibilities are endless! I’ve made pineapple/coconut muffins, vanilla muffins, raspberry muffins, white chocolate chip . . . it’s really up to you. You can throw just about anything in with the basic ingredients and (usually) end up with something delicious.

I love these ideas. I plan to try one tomorrow (Saturday morning) when I have a little more time to prepare a lot of them at once so I can freeze them. I love that I can use things I already have on hand don’t I don’t have to rush to the store.

I actually show this post and saved it so I could print out the recipes later! I usually just buy the premixed but when I don’t have them on hand I would still love to be able to make my own muffins! And being able to make more by increasing the recipes is also great. Thank you so much for sharing!
