The kids and I set out to make some cookies today but instead of the regular chocolate chip cookies we always make, we thought we’d try something different… a cookie cup.
It’s kind of like a cone. You could fill them with ice cream, jello, whipped cream, gummy bears, strawberries… anything!! Oooh.. a nice layer of peanut butter would be nice!
We started with the normal cookie ingredients.
We put them in the pan.
Of course the paddle needed licked
And out they came!

Chocolate Chip Cookie Cups
Ingredients
2 cups oat flour (I just ground up some oats in my blender)
1/2 cup all purpose flour
1 tsp baking soda
1 cup butter, softened
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
2 cups chocolate chips
The How To
Preheat oven to 375.
Cream the sugars, butter and vanilla in a mixer. Add eggs, salt and baking soda while the mixer is going on a med-low speed. Once completely incorporated, add the flours. Add the chocolate chips and stir to combine.
I used my uber mini-muffin pan, which makes 48 mini cups, and put about a tablespoon of the mix in each. My pan is non-stick so I didn’t need to spray it first, however, if yours has a tendency to stick then I’d definitely use some non-stick spray.
Bake for 9-11 minutes. That’s it!
Once they come out, they MUST sit for at least 5 minutes before you touch them.
If some ran together, just use a knife to slice and separate.
These will be great for my son’s upcoming 4th birthday party!
